Amongst them, the industrious Chinese immigrants took up work as shoemakers, tannery workers, and other professions deemed “disrespectful” by upper-caste Hindus. They brought with them their cooking techniques. What ingredients they couldn’t find, they adapted with the local ones creating a happy harmony of flavours that is still a favourite of Calcuttans.”
