“During the American Civil war, the British came to India in search of cotton. Mumbai’s cotton mills started flourishing and the labourers started working tirelessly to fulfil the growing demand. To feed the labourers, the local vendors started selling a snack that was quick to prepare, eat, and light on the pocket too. Hence, the Pav Bhaji was born by mixing leftover boiled vegetables and served with bread.”
